I’ve followed this guy on youtube for years, and in 2011 decided to change his lifestyle and he lost 100 lbs. It was incredible to see his journey and how it difficult it was for him at times but he is incredibly positive, consistent and he reached his goal.

Quinoa Salad
(Follow directions on box to cook quinoa) Using your 1 cup quinoa and 2 cups water begin cooking. (takes about 15 mins)
Chop, dice and slice onion, cilantro, peppers, tomato and jalapeño, combine into large bowl. Open, drain and rinse black beans and corn, place in both with the rest of ingredients.
Quinoa should be finished cooking at this point if there is water left in pan you can drain by pouring quinoa into a cheese cloth (DO NOT USE STRAINER OR YOU’LL HAVE A BAD TIME). Pour quinoa into both with all other chopped ingredients.
In a small bowl combine olive oil, pepper and southwest seasoning. Stir as best as possible and stir into big bowl of goodness.
Now slice lime in halves and squeeze all the mothaluvin’ juice from both halves into the bowl.
Cover bowl with tinfoil and place in refrigerator or divide into half pint wide mouth mason jars (makes about 4 jars).
